Honey Ambrosia

 

 

Method:

Combine fruits, peel, orange rind and juice and brandy, if used, leave covered in a cool place for 24 hours.

Next day add the honey and mix well. Transfer to clean sterilised jars, label and leave for 4 weeks to mature (although will taste delicious straight away). Yield 3-4 medium jars.

Can be used as a topping for ice cream, yogurt, porridge, baked apples or just add to some crusty bread.

 

 

Ingredients:

250g of mixed dried fruit

100g mixed peel

Rind and juice of a large orange

2-4 tablespoons of brandy, or to taste, optional

2 x 340g jars of honey
